A Discard is the starter that is removed during routine feeding. It helps manage healthy growth and acidity. While discard adds flavor and leavening, it does not have the same qualities of active starter.

A The crumb of the loaf refers to the internal structure of the bread, specifically the texture and air pockets within it. The quality of the crumb is a by product of how well the dough was fermented, proofed, and shaped-the crumb absolutely affects the taste of the final baked loaf.

Q What is scoring?

A The scoring of a sourdough loaf is performed with a lame and a razor. The shallow cuts of the loaf are made just before baking. This process allows the dough to expand and release gases.

Q Is sourdough bread gluten free?

A Short answer-No. However, some people who are “gluten sensitive” can consume sourdough bread.
